Amedei Handmade Fine Chocolates: Renaissance Taste
Alessio and Cecilia had a dream, which in the late eighties, urged by passion and enthusiasm, they started to make a reality; they took their first steps toward discovering the routes of cocoa.
Together they experimented with new ideas, to give life to an exclusive fine luxury chocolate, and launched it worldwide. They broke the homology of tastes, and became the artificers of true and proper Renaissance taste.
The Research of the Perfect Harmony
Since 1990, Alessio and Cecilia have devoted and committed themselves to the search of perfect harmonious tastes, becoming reality in the form of a linear balanced bars or a napolitain shape, and a soft roundness of a fine chocolate praline.
The entire production process is followed by dedication and artisan skills such as the selection of the seeds of cocoa, personally done by Alessio in the countries of origin to the manufacturing of the chocolate conducted in the laboratory of Pontedera, under the attentive supervision of Cecilia, Amedeis maitre chocolatier.

The chocolate is an idea in which white and black blend; the pleasure and the transgression bend in lines and curves. Amedei follows the emotions that transform the chocolate into the most precious myth, one which holds together childhood memories and the satisfaction of senses.

The Selection of the Cocoa
In the beginning, my biggest surprise has been to realize that cocoa can be compared to grapes. A good wine is born in the vineyard. A good chocolate originates in a plantation. For this reason, I have gone to research the origins of taste by studying with agronomists and compesinos, and keeping rigid rules of production in order to maintain the highest quality standards.
I feel the greatest, most beautiful sensations when I discover a virgin plantation, never visited by any westerner: I immediately think of how to transform it into a taste or an emotion to bring the perfume, and the atmosphere of that land to whomever tastes the chocolate."
The Manufacture of Handmade Gourmet Amedei Chocolate
We follow the birth of our chocolate step by step, without rushing. Each passage has its time, its antique and precise methods that, together with originality and creativity of recipes, transform the cacao in a chocolate that satisfies the most hard to please palates, a chocolate with full flavor to be tasted in many different shapes: bars, neapolitans, pralines, and other sublime creations that, is still today manufactured by hand, one by one."
